Description: "I have recommended this before but it's such a sublime wine that, with spring upon us, I thought I must flag it up again. Pale straw in the glass, it has a super-concentrated nose of freshly cut grass, asparagus and pear. Details: WINEMAKING: After picking & crushing the grapes in the cool of the night, the juice was clarified by cold settling & racking. It was inoculated with QA23 yeast & the fermentation took place over 12 days between 15 and 20°C in stainless steel tanks. Malo-lactic fermentation was inhibited in order to preserve the vibrant fruit characters. The wine was lightly filtered before bottling.
