Details: WINEMAKING:
After picking & crushing the grapes in the cool of the night, the juice was clarified by cold settling & racking. It was inoculated with QA23 yeast & the fermentation took place over 12 days between 15 and 20°C in stainless steel tanks. Malo-lactic fermentation was inhibited in order to preserve the vibrant fruit characters. The wine was lightly filtered before bottling.
