Details: The grapes were handpicked quite late and very ripe. Following transport to the Hunter, the fruit was crushed and fermented in open fermenters with constant hand plunging.Oak matured in one & two year old American & French oak casks for a period of 12 months. Older oak was used for maturation to avoid dominant new oak characters disturbing the wines balance.
