Grape variety : 100% Shiraz - Wineyards age average: 45 years. Clayey-limestone hill-sides plantation. Goblet and trellised pruning. Traditionnal vinifications with closed tanks and control of temperatures (28 up to 30° C). Vatting of 20-30 days. Elevage during 15 months in oak barrels (demi-muids : 600 l) . Blending made between new barrels and less recent barrels. Shinny and steady red robe – tannic – aromatic and rounded – good persitence. This wine can be served when it gets 2 years. Better after a few years and can be kept up to 7 –10 years. Ageing it, you must serve this wine in a decanter to get even more taste qualities. It suits with white and red meats.
