Description: Slightly austere, restrained fruit, a hint of honeysuckle and great palate length, with white stone fruit and savoury nutty characters; this is an elegantly structured wine with a long, fine, bone dry finish.

Prior to whole bunch pressing, the hand harvested bunches were chilled for 36 hours. Barrel fermentation was then carried out in new, one and two year old French Alliers and Vosges barriques. 60% of the wine underwent malolactic fermentation in French barriques. The wine is matured in oak for 10 months with regular stirring of yeast lees to enhance flavour and texture.
Pale straw in colour, with a slight green hue. The wine has aromas of pear and orange rind. The palate combines peach, lime and cashew with a long mineral finish.
