  • Description: A delightful Chardonnay with subtle hints of melon and nectarine and a toasty, biscuity character. Highly recommended!
  • Details: The grapes were de-stemmed and crushed and pumped to the press with no sulphur addition. The juice was chilled immediately and allowed to settle naturally. Cultured yeasts were added to initiate fermentation, which took place at 12-14 degrees Celsius in order to retain fruit flavours. Half the wine was fermented in oak, while one third of the blend was put through malolactic fermentation in order to add complexity. Further complexity was derived from ageing on lees for six months.
