Details: WINEMAKING:
After crushing and gentle pressing, the juice was clarified by cold settling and racking. The pressings were hyperoxidatively handled before fermentation. It was inoculated with QA23
and Pris de Mousse yeast. The fermentation took place over 15 days in a combination of stainless steel tanks and French and Hungarian oak barrels on low solids. Approximately 20% of the wine underwent partial malo-lactic fermentation. The
wine was lightly filtered before bottling.
